French Onion Soup Recipe For Healthy Skin & Curing Hangovers


Never underestimate the mighty onion! Winter Recipe: French Onion Soup

SERVES 4
245 CALORIES PER SERVING

1 tbsp olive oil
25g butter
700g onions (about 5 medium onions), thinly sliced in rings
3 garlic cloves, finely diced
1.2 litres vegetable stock
2 tbsp apple cider vinegar
Sea salt and black pepper

  1. Place the oil and butter in a large pan set over a high heat. Once melted, add the onions and garlic. Sauté for 5 minutes or until the onions are tinged with brown.
  2. Reduce the heat to low and cook, stirring occasionally, for 30 minutes. By then, the base of the pan should be covered in a rich, nut-brown, caramelised film.
  3. Pour in the stock and vinegar and stir in well, scrape the bottom of the pan to incorporate the caramelised onions. Bring to a simmer, then turn down the heat and leave for 1 hour. Season before pouring into bowls.
